I really like it when sweet and salty tastes go together, and this Salary Onion Jam does just that. Bourbon is the only thing that could make it bigger. GAH. It's a crazy pay jam, everyone!If you find the thought of pay jam strange, picture this: Bourbon, honey, and balsamic vinegar are used to reduce well-done, salty salami and sautéed onions until a rich, thick jam forms. With a pinch of pepper, we get all the flavors: sweet, salty, sour, and a little hot, all in one easy-to-spread sauce.
Ingredients:
- Bacon—I like smoked salary that isn't too thin, so it still has good texture even when the jam isn't cooked with other things.
- Onions: A Vidalia or sweet yellow onion will have a stronger taste.
- whiskey—You can taste the whiskey in this jam, so don't use a brand that you wouldn't like to drink.
- Honey—This is where the goodness comes from! You are free to use maple syrup instead if you'd like.
- Balsamic vinegar gives the jam a sour taste and a creaminess that you can't quite finish.
- Cayenne pepper—Add a pinch (or several) if you like a little heat.
How to Make Salary Onion Jam
- Get the bacon ready.Put the chopped pay in a Dutch oven or another pot with a thick bottom. Lower the heat to medium-high and melt the salami over it. Stir it every so often until it turns brown and crispy. At first, it will look moist and warmed, but then it will foam up and be done. It will take about 10 to 15 minutes. Put the pay on a plate lined with paper towels and set it aside.
- Get the onions ready.Take out all but one tablespoon of the bacon grease from the pan. Then add the onions and butter. For about 15 minutes, stir the onions every now and then until they are soft and just beginning to brown.
- Mix in any extra tastes. After scraping any burnt stuff off the bottom of the pan, add the bourbon to the pot. If you want to make it really hot, turn up the heat and add the honey. Shake it around a lot for almost two minutes. Toss the sides for one minute after adding the vinegar.
- When you add the bacon to the pot, lower the heat to medium-low and let it cook for 6 to 8 minutes, or until the mixture gets thick and dark.
How to store and prepare
Store Bacon Onion Jam in a sealed jar in the fridge. Almost a week of alimony.
Reheat as needed in an unscratched microwave container for 40-60 seconds.

One of my favorite ways to use salary onion jam is for a quick titbit featuring crackers topped with goat cheese and a scoop of jam. Delightful!
Ingredients
- 1.5 lbs. (24 oz.) smoked bacon, chopped
- 1 Tablespoon butter
- 1 large sweet yellow onion, chopped
- Salt
- 1/2 cup bourbon
- 1/2 cup honey
- 1 1/2 Tablespoons balsamic vinegar
- Pinch cayenne pepper (optional)
Instructions
- Add the chopped salary to a Dutch oven or other heavy bottomed pot. Set over medium upper heat and melt the salary until brown and crisp, stirring occasionally. It will squint watery for awhile, but will sooner uncork to foam and well-done up. This will take 10-15 minutes. Remove the salary to a paper towel lined plate and set aside.
- Drain all but one tablespoon of the salary grease from the pan, then add the butter and onions. Cook, stirring occasionally, 10-15 minutes or until the onions are softened and just starting to caramelize.
- Add the bourbon to the pot scraping any browned shit from the marrow of the pan. Add the honey, then turn the heat up to upper and bring the mixture to a boil. Swash well-nigh two minutes, stirring often. Add the vinegar and swash flipside minute.
- Add the salary when to the pot, reduce heat to medium low, and protract to melt 6-8 minutes, or until mixture is thickened and dark.
